Chef Peter Chang became famous as much for his intense, nearly perfect Szechuan food as for his tendency to flee each restaurant where he cooked as soon as the word got out he was there. Now that he has his own chain, it's unlikely he'll run away. But it also means he's rarely, if ever, in the kitchen (it's rumored that you'll most likely find him at his Rockville outpost because he lives nearby). Regardless, Chang's restaurants — if not quite as etherial — are still top-notch even when the owner is out.

"The best neighborhood Chinese restaurant in Washington is just across the Potomac, in Arlington. Or so I thought after my maiden meal at Peter Chang, named for the onetime chef of the Chinese Embassy with a cultlike following. No other competitor comes close to the bar set by Peter Chang, which since opening in March has become home not only to some memorably numbing Sichuan dishes, but to service that’s the equal of the kitchen’s output.
