Chef Takeshi Nishikawa has worked in numerous excellent kitchens around the area, most notably at Bryan Voltaggio's Volt in Frederick. Voltaggio's modern influence shows up quite a bit on the menu here, which represents a bit of a departure from the 27-year-old restaurant’s prior offerings.
